INGREDIENTS
- .5kg of zucchini (or any summer squash), sliced into ½-inch rounds
- 3 tablespoons (or less) olive oil, divided
- 3 small cloves garlic
- 10 (or more) mint leaves
- 5 (or more) basil leaves
- 1 heaping tablespoon capers, rinsed
- 2 tablespoons pine nuts or walnuts, lightly toasted
- 1 to 2 teaspoon red wine vinegar or white balsamic or whatever vinegar you have
- Sea salt and freshly ground pepper, to taste
- Additional mint and basil, torn, to garnish

INGREDIENTS
- 2 tsps chia seeds
- 3 tbsps warm water
- 1 onions (medium)
- 170 grams mushrooms (washed)
- 3 cloves garlic
- 384 grams lentils (cooked, green or brown, well drained)
- 52 grams old-fashioned oats (certified gluten-free, if necessary)
- 2 tbsps potato starch (or cornstarch, see note below)
- 1 tbsp soy sauce (or wheat-free tamari, omit for soy-free)
- 1 tbsp tomato paste
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp smoked paprika
- 1/2 tsp salt (optional or to taste)
- 1/4 tsp dried thyme
- black pepper (Generous grating)
